Made with simple ingredients and frozen spinach for convenience, these Spinach-Stuffed Potatoes are creamy, cheesy, and packed with flavor. The tender baked potatoes are scooped out and combined with sautéed frozen spinach, garlic, cheese, and a touch of creaminess, then baked again until golden and melty. A quick, comforting meal that’s perfect any night of the week!

Bake the potatoes: Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, and bake directly on the rack (or on a tray) for 45–60 minutes, until fork-tender.
Prepare the filling: While potatoes bake, sauté garlic in a little oil or butter (optional, but adds flavor). Add chopped spinach, cook 1–2 minutes until wilted (skip if using thawed spinach).
Scoop & mix: Once potatoes are cool enough to handle, slice them in half lengthwise. Carefully scoop out most of the flesh, leaving a thin layer to keep the skins stable. In a bowl, mash the potato flesh with mayonnaise, sautéed spinach/garlic, and cheese. Season with salt and pepper.
Stuff & bake again: Spoon the filling back into the potato skins. Sprinkle with a bit of extra cheese if you like. Return to oven for 10–15 minutes until hot and lightly golden.
