As seen in the 2025 Evergreen Yom Tov Planner! When I’m preparing for Yom Tov, I always make room for a few dishes that feel extra special. This Broccoli Lukshen Kugel is one of them. It’s an elegant and satisfying side, with a creamy broccoli base blended to perfection, golden sautéed onions, and tender noodles that bake into a rich, comforting kugel. The preparation may be a bit more delicate, but every bite is absolutely worth it.

Preheat the oven to 350°
Line either two 9-inch round pans or 14 small pans with parchment paper and set aside.
Bring a pot of salted water to a boil. Add the frozen broccoli and cook for about 7 minutes, or until tender. Drain well. In a large bowl, combine the drained broccoli with 2 tablespoons oil, mayonnaise, eggs, and consommé. Use an immersion blender or hand blender to blend the mixture until smooth. Set aside.
In a skillet, heat ¼ cup oil and sauté the diced onions until golden and fragrant. In a separate large bowl, combine the cooked noodles, flour, salt, white pepper, and the sautéed onions. Mix to combine.
Pour the blended broccoli mixture into the noodle mixture. Stir everything together until well incorporated.
Divide the mixture evenly between the prepared pans. For two 9-inch round pans, bake at 350° for 1 hour. For 14 small pans, bake at 350° for 45-50 minutes, or until golden on top. Enjoy!
