
Mediterranean Chopped Salad

A fun twist for a Yom Tov side! Crispy eggroll wrappers are filled with sweet potato and crunchy fried onions, then finished with a drizzle of date syrup for the perfect sweet-and-savory bite.

Preheat oven to 425°F.
Prepare the frozen diced sweet potatoes according to package directions, cooking until golden and slightly crispy. Let cool.
In a bowl, combine the sweet potatoes, chopped pastrami, and crispy fried onions.
Place about ¼ cup of filling in the center of each eggroll wrapper. Fold in the sides and roll tightly, sealing the edge with a little water.
Place eggrolls seam-side down on a parchment-lined baking sheet.
Bake for 12–15 minutes, turning halfway through, until golden and crispy.
Drizzle with date syrup just before serving.
