
Almond Butter Truffles

These are also called Florentine cookies and they're really delicious but make sure to watch the method because these aren't your typical cookies they're made in a pot then a bowl. Enjoy!

Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a medium saucepan over medium-high heat, combine the margarine, brown sugar and almond flour. Whisk constantly until the mixture comes to a boil.
As soon as it reaches the boil, remove from the heat and transfer the mixture to a bowl.
Stir in the vanilla extract and almond milk.
Drop small teaspoons of batter onto the prepared baking sheet, leaving plenty of space between each cookie since they spread while baking.
Bake for 8-10 minutes, until thin, bubbling, and golden brown.
Allow the cookies to cool completely on the pan so they crisp up.
Melt the chocolate with the coconut oil, stirring until smooth.
Spread a thin layer of chocolate on the flat side of each cookie and allow it to set, optionally drizzle some more chocolate over the cookies and place them in the fridge for 5 minutes to set.
