
Spicy Salmon Crispy Rice Salad

A fresh, flavorful dinner that’s perfect for weeknights. Golden, crunchy, and full of vibrant pesto flavor, it’s simple to make but impressive on the plate, pairing perfectly with just about any side.

Preheat the oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.
Prepare the topping: In a small bowl, mix breadcrumbs, pesto and sesame seeds until evenly combined.
Coat the salmon: Pat salmon dry. Spread a thin layer of mayonnaise over the top of each fillet. Press the pesto-breadcrumb mixture on top of the mayo, covering each fillet. Sprinkle lemon zest over the top if using.
Bake: Place salmon on the prepared sheet pan. Bake 12–15 minutes, or until the topping is golden and the salmon flakes easily with a fork.
Serve: Plate immediately with a side of roasted vegetables, steamed greens, or a simple salad for a complete dinner.
