
Lemon Dill Salmon

A great Yom Tov appetizer

In a bowl, toss the cubed salmon with sesame oil, soy sauce, honey, scallions, garlic powder, onion, powder, chili powder, paprika dried oregano, and salt. Marinate for up to 4 hours. Preheat your oven to 400F. Cut your nori sheets into four equal squares. To each nori square, add about 1 heaping tablespoon of rice and spread out slightly. Transfer the square to your muffin tin, pushing down gently to center the rice in the middle with the edges coming up along the sides of the slot. Fill each muffin slot with 4-5 salmon cubes. Transfer the pan to the oven and bake for 15-17 minutes. Broil for 1-2 minutes at the end if needed to get a little crisp on the salmon. Allow to cool slightly and top with diced avocado, black sesame seeds, and a drizzle of spicy mayo. Enjoy!
